Institute of Home Science expert Carolina Biotti knows a things or two about keeping your food fresh. As a Food Preservation Scientist she spends a lot of time in the lab, testing new innovations.
Carolina studied Food Science and Technology in Milan, Italy before starting at the Whirlpool Corporation. As the Global Food Preservation Lead, she heads a team that researches consumer refrigeration needs across the globe and finds innovative solutions for those needs.
Here is what she had to say about her favorite part of her job and her favorite dish to cook.
Carolina’s Pasta alla Norma Recipe:
- 4 tablespoons of Olive Oil
- 1 medium Onion
- 4 Garlic Cloves
- 1 large Eggplant
- 1/1/2 pounds of Cherry Tomatoes
- 2 tablespoons Tomato Paste
- 3/4 cup Ricotta Cheese
- Salt & Pepper
- 1/2 cup fresh Basil leaves
- 1 Pound Penne Pasta
Bring lightly salted water to a boil, add penne and cook until al dente.
Drain pasta, return to pot and set aside.
Heat oil in a large skillet, add onion and garlic. Cook till softened.
Add salt & pepper seasoned eggplant to skillet and cover. In about 5 minutes, uncover and stir.
Add tomatoes and tomato paste to skillet. Stir until softened.
Add basil to sauce and toss in cooked pasta.
Garnish with fresh basil and ricotta cheese and serve.
